Easy Paleo Banana Bread

Doesn’t a snow day make you want to bake?

In our family, my sister Christine makes sure that having to be gluten and dairy free doesn’t mean you can’t enjoy some baked goods now and then. So I’m sharing with you her healthy, yum-in-your-tum banana bread. The best part about this is that it’s so easy. All you need is a blender and a bread pan, and Lord knows I’m always down for the minimum dishes to wash. Unless you’re taking photos-then you pull out fancy dishes and pretend like it’s normal.

Paleo Banana Bread- Gluten/Dairy Free

  • 4 very ripe bananas
  • 1/4 c. coconut oil
  • 2 tsp. vanilla
  • 4 eggs
  • 2 T. maple syrup or honey
  • 2/3 c. coconut flour
  • 1 tsp. cinnamon
  • 1/3 tsp. nutmeg
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 c. chopped walnuts (optional)
Preheat oven to 350. Grease a bread pan and line with parchment paper. Mix bananas through maple syrup in a blender. Add dry ingredients to blender and pulse until completely mixed. Stir in nuts if desired. Pour into pan lined with parchment paper and greased and bake for 40-45 minutes or until set.banana bread (6 of 8)
Allow to cool in pan before removing. The parchment paper makes is super easy to pull out of the pan
